In Zusammenarbeit mit dem bekannten kanadischen Meisterschmied Murray Carter, der selbst 18 Jahre lang das Schmiedehandwerk in einem der angesehensten japanischen Schmieden erlernte, konzipierte Spyderco die beiden Küchenmesserserien ITAMAE und WAKIITA, die beide unter der Marke MURRAY CARTER COLLECTION BY SPYDERCO veröffentlicht werden.
Wörtlich übersetzt bedeutet Itamae "vor dem Schneidebrett", ein prestigeträchtiger Titel, der hochqualifizierten Sushi-Köchen vorbehalten ist. Die Itamae-Serie steht somit für das Premiumsegment der Murray Carter Collection. Die Klingen werden hierbei aufwendig laminiert, so besitzen diese einen schneidkern aus Aogami Super Blue Steel, welcher von zwei Schichten SUS410 Stainless Steel umgeben wird. Mit dem Verfahren kann erreicht werden, dass der harte aber dafür rostanfällige Super Blue Steel Schneidkern vor Korrosion geschützt wird, sodass die Vorteile der unterschiedlichen Materialien genutzt werden können.
Im klassischen Stil präsentieren die Messer der Itamae-Serie traditionelle "wa-style" (achteckige) Griffe, welche aus einem G-10-Verbund in einzigartiger Wurzelholz-Optik bestehen.
Gyutou - das Gyutou ist ein großes Kochmesser, welches im Unterschied zum Santoku größer und schwerer gebaut ist.
